Summary and Course Content:

The study of probiotics and prebiotics in order to deepen the role they play in human health.

The course includes two major themes. On the one hand, it aims to delve into the concept of probiotic bacteria and their impact on health, bowel function, mechanism of action, technological applications, safety of probiotic bacteria, evaluation and regulation. various methodologies ranging from classical and molecular microbiology at the “omic” techniques will be studied.

On the other hand, they will study different aspects of prebiotic and deepen the different families of prebiotic oligosaccharides, taking into account the methods of collection, analysis, characterization and evaluation of their possible beneficial effects on human health. As a practical matter the preparation of a prebiotic ingredient and its incorporation into a food commonly consumed is done.
